Bread Uppuma


Ingredients:
Bread                           1 packet
Onion                           1
Green Chilly                  2 nos
Mustard seeds              1tsp
Curry leaves                 1 stem
Oil                                As required




Preparation:
Grind bread in mixer to make it small pieces.
Put pan in stove and add oil. Splutter mustard seeds.
Add onions, green chilly ad curry leaves.
When it become brown, add bread pieces to it and
sprinkle little water and cook for 10 mins in low flame.

You can add left over chicken curry or chicken pieces to above for making chicken Uppuma!

Or add cooked vegetables to make it Vegetable bread uppuma

Appam

Ingredients:
Idly/Dosa Raw Rice    - 4 cups
Coconut                      - 1/2coconut grinded
Boiled Rice                 - 1 cup
Yeast                          - 1 pinch
Sugar                          - 3 tblsp
Salt                             - as required



Preparation:
Soak the rice in water for 1 night for getting soft appam mixture
Grind soaked rice , Coconut ,Cooked Rice,yeast and sugar in grinder.
Add salt just before preparing appam
Appam mixture is ready.

Tips:
Keep the appam mixture in thermal rice cooker over night.
Soak the rice overnight or atleast 6 hrs to make the appam more soft.
If no time to put the rice overnight,keep the rice in hot water for 3 hrs.

Pidi

This is a traditional dish of Jacobite Christians.In childhood i had tasted this dish.
After long years,again i got a chance to have this dish.So thought of preparing this.I got lot of recipes for this and this is my version which came well and my hubby enjoyed the dish!


Ingredients:
Rice Powder               11/2cup
Water                         5 cups
Coconut grated           1/2 coconut
Cocount milk               1/2coconut
Garlic                          3 cloves
Cumin seeds                1/2tbl spoon




Preparation:
Roast rice powder,3/4cup of grated coconut and salt (as required) in a pan till it becomes slightly pink.
Crush Garlic and Cumin Seeds and drop it in 5 cups of Water and boil it.
After water is boiled ,take enough water to rice powder and make a soft.
Press the dough softly and make small balls out of it
To the left over water add cocnut milk and the remaining grated coconut and make it boil.
Once boiled nicely, add the prepared dumplings and cook it on a medium heat till most of the liquid is evaporated.
Stir often to prevent burning and add more Salt if needed.
Switch off the flame and leave it aside to cool.
